## Caption

Nothing dips quite like shrimp. 🍤 If you're ready to fry, give these little poppers a try for your next #tailgate feast:

🍤 2 pounds medium/large shrimp, peeled, deveined, and tails discarded
🍋 1 tsp lemon zest
🧄 1 lg grated garlic cloves
🦀 1 1/2 tbsp Old Bay seasoning, divided
🍞 1 1/2 cups all-purpose flour
🌽 1/2 cup cornstarch
🥫 1 teaspoon baking powder
🌶️ 1 1/2 tsp freshly ground black pepper
🌶️ 1/4 tsp cayenne pepper
🦪 1 cup bottled clam juice
🍗 1/2 cup chicken broth
🥘 3 qts vegetable oil for frying

1️⃣ Combine shrimp, lemon zest, garlic, and 1/2 tsp of Old Bay in a plastic bag to mix, before refrigerating for at least 30 minutes.
2️⃣ Preheat the oven to 200° F, while heating the oil in a large Dutch-oven to 375° F. 
3️⃣ Whisk together the flour, cornstarch, remaining Old Bay, baking powder, black pepper, and cayenne. Stir in the clam juice and chicken broth, and whisking until smooth. 
4️⃣ Dip marinated shrimp into the batter until evenly coated.
5️⃣Quickly add a few shrimp at a time to oil and fry until golden brown, about 2 minutes.  Drain on paper towel-lined plates, then transfer to a wire rack.  Transfer to a baking sheet and place the shrimp in the oven to keep warm until ready to serve. 
6️⃣ Return oil temperature to 375° F and repeat with remaining shrimp. 
7️⃣ Serve with your favorite Litehouse Ranch for dipping!
