Lemongrass Basil Focaccia Bread Recipe

🗒️ Ingredients — Yields 1 loaf

▢ 2 1/2 cups lukewarm water
▢ 2 teaspoon  instant yeast
▢ 2 1/2 teaspoons  honey
▢ 5 1/2 cups all-purpose flour
▢ 1 tablespoon  Kosher Salt
▢ 1/4 cup Corto Lemongrass & Basil Olive Oil
(plus more for pan and finishing)

▢ Flaky sea salt
▢ 1/2 teaspoon Garlic powder

👩🏻‍🍳Instructions

1. In a medium bowl, whisk together the water, yeast, and honey until combined.

2. Then In a separate large bowl, whisk together the flour, and salt together to combine.

3. Combine the yeast mixture, flour, and Lemongrass & Basil olive oil and combine with a rubber spatula until just incorporated. Then transfer to a large greased bowl, and cover with plastic wrap. Place in the refrigerator to ferment 14 hours overnight or until doubled in volume.

4. Grease a 9x13 baking pan with olive oil. When the dough is ready, deflate the dough, release it from the sides of the bowl and fold it onto itself gently. Then pour it onto the pan. Roll the dough ball and coat it all over forming a rough ball. Let the dough rest for 2 hours until almost doubled in size.

5. Pour 2 tablespoons of oil over the dough and rub your hands with oil to coat. Using the tip of your fingers press into the dough to create deep dimples. Gently stretch the dough as you dimple to fill the pan.

6. Season the dough. Season the dough with flakey sea salt and garlic powder all over.

7. Preheat the oven to 425°F. Bake for 25 minutes until the bread is golden and crisp. Remove from the oven and transfer to a cooling rack. Let cool for 10 minutes before slicing and serving.
