1 long baguette, diagonally sliced into ½-inch thick slices
2 tbsp vegan butter
1 clove garlic
2 tbsp NotMayo
1 tbsp gochujang
2 tsp kimchi juice
1 cup kimchi, chopped
1 shallot, julienned
1 scallion, chopped
1 tbsp rice vinegar
1 tbsp sweetener (maple syrup, agave, brown rice syrup, etc.)
2 tsp toasted sesame oil, plus more for garnish
1 tsp toasted sesame seeds, plus more for garnish
1 tsp salt
1 tsp cracked black pepper

Preheat oven to 450°F. Butter each side of baguette slices. Place on a baking sheet and bake for 7 minutes. Flip and bake for another 7 minutes, until slices are golden brown. When the bread is toasted, scrape clove of raw garlic over one side of the bread. Mix together NotMayo, gochujang, and kimchi juice. Spread over each slice of bread. Then, mix together kimchi, shallot, scallion, rice vinegar, sweetener, sesame oil, sesame seeds, salt, and pepper. Top each slice of bread with generous helping of kimchi mixture. Drizzle with additional sesame oil and garnish with sesame seeds and any leftover scallion greens.
