HOW TO MAKE ↴⁣⁣⁣⁣
- 2 mashed ripe bananas⁣ (1 cup)⁣⁣⁣
- 1 tsp vanilla extract ⁣⁣⁣⁣
- 2 eggs⁣⁣⁣⁣
- 1/4 c melted coconut oil⁣⁣⁣⁣
- 1/2 c honey⁣⁣⁣⁣
whisk together in a bowl. ⁣⁣⁣⁣
- 1 1/2 c flour⁣⁣⁣⁣
- 1/2 tsp salt⁣⁣⁣⁣
- 1 1/2 tsp cinnamon⁣⁣⁣⁣
- 1/4 tsp nutmeg⁣⁣⁣
- 1 tsp baking soda⁣⁣⁣⁣
whisk together dry ingredients then fold in wet ingredients. ⁣⁣⁣
- 1/3 c shredded carrot⁣⁣⁣
- 1 shredded apple (~ 1 c)⁣⁣⁣
- 1/2 c roughly chopped walnuts (+ more for topping)⁣⁣⁣⁣
squeeze the carrots & apple each w a paper towel to get out excess moisture. then fold into batter along w the walnuts. ⁣⁣⁣
pour into greased loaf dish, top with more handfuls of walnuts. bake 48-52 mins at 350 F or until toothpick comes out clean, let cool, & enjoy :)⁣⁣
