Sweet Potato Pasta Bake

2 large sweet potatoes
1 Large onion, chopped
2 cloves garlic, minced
2 tbsp fresh sage, chopped
1 1/3 cups milk *
3 tbsp pine nuts
2 tbsp butter
Salt & Pepper
Olive oil
2 cups chopped spinach
¾ cup Parmesan cheese

*may need to add more milk for consistency

1. Preheat oven to 375 degrees.
2. Skin and chop sweet potatoes. Place in a baking dish, drizzle with 3 tbsp olive oil salt & pepper and bake 25-30 minutes. 3. Remove from oven when soft.
4. Place potatoes in a large bowl and mash with milk. You may have to add a bit more milk if consistency is too thick.
5. In a large pan over medium-high heat add 2 tbsp olive oil and add onions. Cook 5 minutes stirring frequently.
6. Add garlic and decease to medium -low heat. Cook until soft (about 15 minutes) .Add sage and continue to cook until golden brown.
7. Cook penne pasta until al dente. Rinse with cold water.
8. In a small pan over medium heat melt butter and add pine nuts. Stir frequently watching carefully until golden brown.
9. Remove from heat.
10.Mix sweet potato mixture into onion sage mixture.
11. Preheat oven 375.
12. In a large baking dish toss cooked pasta with sweet potato sauce. Stir in spinach. Top with toasted pine nuts and parmesan cheese.
13. Bake covered for 15 minutes and uncover for 5 (or until cheese melted).
