Day 11 of Saucemas | Beef Tenderloin w/ a peppercorn sauce 🤌🏻🥩🍽️✨ #roastedbeeftenderlion #holiday #holidaymeal #cookwithme #fyp  Ingredients: 2 pound beef tenderloin (allow 1-2 hours for the beef to sit out and become room temp before cooking) 1 tsp salt 1 tsp ground pepper  3 tbsp butter room temp 2 tsp parsley 1/2 tsp rosemary 1/2 tsp thyme  1 tsp minced garlic  1 onion finely chopped 1.5 tbsp avocado oil  2 tbsp butter 2 tsp worcestershire  2 tsp freshly cracked pepper 3/4 cup broth 3/4 cup cream  Directions: 1. Preheat the oven to 425 2. Finely chop 1 tsp parsley, 1/2 tsp rosemary, 1/2 tsp thyme, and 1 tsp minced garlic. In a small mixing bowl, add 3 tbsp room temp butter + herbs and mix well.  3. Pat dry the beef tenderloin with paper towels. Season both sides with 1 tsp of salt and 1 tsp pepper. Make sure the beef is tied with twine - you can ask the butcher to do this for you! 4. In an oven safe pan, add a tbsp avocado oil on stove top medium low heat. Once the pan has warmed up, add the beef tenderloin. Sear one side for 3 minutes or until browned and then flip over. Spread the garlic herb butter on top of the beef while the other side sears 3 minutes.  5. Transfer the pan from the stove to the oven and let the meat cook for at least 30 minutes or until desired temperature is reached. I cooked mine to medium rare. RARE – 115°F – 120°F MEDIUM RARE – 120°F – 125°F MEDIUM – 130°F – 135°F 6. Let the beef tenderloin sit for 15 minutes before cutting it.  For the peppercorn sauce: 1. In a sauce pot, add about half a tbsp of avocado oil and 1 white onion finely chopped. Add 2 tbsp of butter. Once the butter has melted, add 2 tsp of freshly cracked pepper and let the onions caramelize.  2. Whisk in the broth, cream, and worcestershire sauce. Let cook for about 10-15 minutes as the sauce thickens.  3. With a strainer, pour the sauce into a smaller sauce pot to separate the onions. Continue to whisk the sauce on low heat as thickens. Save the onions to serve on top of the beef, serve the sauce with the beef.
