Creamy Vegan White ‘Chicken’ Chili 🌿 ep. 7 of recipes from my e-cookbook!

Whenever the weather turns a bit chilly, I turn to this soup because it’s so comforting, spiced to perfection and full of hearty ingredients that fill me up.
It’s a huge hit in my family and one of those recipes that is on our weekly rotation.

This soup is especially good topped off with some creamy avocado, lots of fresh cilantro, and of course, crunchy tortilla strips 🙌

Here are some of the main ingredients you’ll need:

▫️poblano pepper 
▫️celery
▫️green onion
▫️lots of cozy spices!
▫️cashews
▫️vegetable bouillon
▫️cannellini beans 
▫️store bought vegan ‘chicken’ ~ optional!
▫️white corn
