Why is this cake so irresistibly delicious? It’s all about the grapefruits, my friends! Sourced directly from the sunny groves of Florida, this grapefruit is at its peak flavor, juiciness and aroma through March. The tangy-sweet zing is what makes this cake an absolute game-changer.

Each bite of the moist, tender cake infused with olive oil is complemented by the vibrant, citrusy notes of fresh Florida Grapefruit. And just when you think it can’t get any better, the cake is soaked in a grapefruit syrup, covering every crumb with zesty goodness.

Here’s how it’s made!

Ingredients: 
3 tablespoons Florida Grapefruit juice
Zest of one Florida Grapefruit
⅓ cup powdered sugar + ¼ cup Florida Grapefruit Juice (for the soak) 
1 ¼ cup All-purpose flour
½ teaspoon Baking powder
¼ teaspoon Baking soda
¼ teaspoon Salt
⅔ cup Olive oil
½ cup Yogurt
2 large Eggs
⅔ cup Granulated sugar
Grapefruit & Florals to garnish

Instructions: 
• Preheat oven to 350ºF and grease an 8” round pan, placing an 8 » parchment round on the base of the pan.
• Mix the flour, baking powder, baking soda and salt together in a small bowl.
• In a separate bowl, whisk together the olive oil, Greek yogurt and eggs until smooth.
• Add the sugar, grapefruit juice and zest whisking until smooth. Then add the dry ingredients, mixing until completely combined. 
• Pour batter into your prepared pan. Bake for 35 minutes or until a toothpick inserted comes out clean. While the cake is baking, whisk together the sifted powdered sugar and grapefruit juice until smooth and set aside. 
• Poke the cake with a toothpick, then pour the grapefruit soak on top. After cooling for 15 minutes, remove the cake from the pan and place on a serving platter.
• Garnish with grapefruit slices and florals if desired before serving!
