Tomorrow is Epiphany, and to me it means Galette des Rois or King’s tart, a dessert made especially on this day in France. You will find this dessert in every “boulangerie” . Traditionally, you hide a bean or “fève” inside the tart, and whoever gets it on the slice get to be the king or queen of the day. You can see the fève on my video. For me, is mostly a memory from the time I spent in France, and it’s a delicious dessert made out of puff pastry and almond filling. It’s a dessert that I make every year. Enjoy!

Recipe
Ingredients

2 sheets of puff pastry cut in circles
1 1/2 cup almond flour
1/2 cup sugar
1 stick of butter softened
2 eggs
1/2 tsp almond extract 

Instructions

Preheat the oven at 400F degrees.
Start whisking the sugar and butter until sugar dissolves.
Stir in the eggs one by one and  keep whisking. 
Add almond extract, and almond flour.
Combine well for a thick paste. 
Lay out one sheet of puff pastry. 
Spread the almond cream leaving 1” around.
Top it with the other puff pastry. If the dough is square use a round form to cut it in circles. I used a spring form. 
Press around the border to seal the edges. 
Brush the galette with egg wash and a little milk.
Bake for 30 minutes or until golden brown.
Remove from the oven and let it cool. 
Brush with syrup (optional)
