I think only a big bowl of pasta can warm me up today. Perfectly al dente pasta coated in a Creamy Spicy Italian Sausage and Red Pepper sauce is the comfort that I’m looking for. Stay warm! Enjoy!

Italian sausage and red pepper pasta!

Servings 8

Ingredients

1 lb mild italian sausage
2 tbsp olive oil
1 onion sliced
2-3 cloves of garlic sliced
1 12 oz jar roasted red peppers
1 tbsp tomato paste
1/2 cup marsala wine or white wine
1 cup heavy cream
Salt and black pepper to taste
Pinch of Chili flakes
1 package of paccheri pasta

Instructions

Cook pasta according to the package directions for al dente. Drain. Reserve one cup of the starching cooking water. 

Heat a large skillet over medium heat with olive oil. Add the sausage to your heated skillet, breaking it up with your spoon. Cook 5 minutes until browned and cooked through. Remove sausage from the skillet.

Add onion and garlic and sauté until translucent for about 5 minutes. Add the tomato paste ad continue to stir. Add the red peppers and cook for another 3-4 minutes.
Deglaze the pan with the wine and cook until liquid evaporates.
Pour the heavy cream into the pan and simmer on low heat for a few minutes. Season with salt and black pepper. 
Transfer mixture into a blender and blend until smooth.  Pour the sauce back into the pan. Bring back the sausage and stir to combine.
Add cooked pasta into the pan and combine gently. 
Serve immediately with freshly grated parmesan cheese and a pinch of chili flakes
