INGREDIENTS:
1 lb. ground beef
1 tsp olive oil
I onion, chopped
2 cloves garlic, minced
1 14.5 oz can fire roasted diced tomatoes
1 15 oz can pinto beans, drained
¼ cup 505 Southwestern Hatch Valley Green Chile
Pinch sea salt
Pinch black pepper
1 packet taco seasoning
1 tbsp chili powder
4 ½ cups Fritos corn chips
2 ½ cups shredded Mexican cheese
Sliced green onions, chopped tomatoes, chopped cilantro and sliced jalapeño for
toppings

DIRECTIONS:
1️⃣ Heat oil in a large oven-proof skillet. Add beef and cook for 7-8 minutes. Mix in onions and cook for 4 minutes. Add garlic, cook for 1 minute.
2️⃣ Add taco seasoning, chili powder, salt, pepper, diced tomatoes, pinto beans and Hatch Green Chile. Bring to boil, reduce heat and simmer for about 8 minutes. Remove from pan.
3️⃣ Layer 2 cups of Fritos on the bottom of the pan. Top with half of the beef mixture.
Sprinkle with 1 cup of cheese. Layer other 2 cups of Fritos and add remaining beef
mixture on top. Top with remaining Fritos and cheese. Bake at 350 degrees for 15 minutes. Top with green onions, jalapeños, cilantro and
tomatoes.
