It’s not Lunar New Year without this Coconut Candy! 🥥

This colorful coconut candy, aka Mứt dừa, is a traditional Vietnamese treat that is made purely from coconut and sugar. It is a popular snack especially during Tết or Lunar New Year 🧧

📝 Ingredients

* 2  fresh coconuts
* 1 ½ cup (300 g) sugar
* ¼ teaspoon salt
* 2 teaspoon (9 g) vanilla sugar
* ⅛ teaspoon pandan extract
* 2-3 drops food coloring

👩🏻‍🍳 Instructions

1. Crack open the coconut in half. 
2. Remove the meat from the shell with a butter knife. (Lightly steaming first will help loosen the meat) Then peel off the outer brown edge. 
3. Then using the peeler, shred the coconut into long strips. Then wash the coconut strips with water until the water runs clear. 
4. Toss the coconut with sugar, salt, and vanilla sugar until combined. Marinate for 4 hours or overnight. The sugar should dissolve completely and form a syrup at the bottom of the bowl. 
5. Divide the coconut strips and syrup into three separate bowls. Color two bowls and leave one uncolored.  
6. Cook one bowl at a time. Add the coconut and the sugar syrup to a medium pan over medium-low heat. Gently toss the coconut continuously until it dries and turns opaque—about 20 minutes. Transfer to a wire rack to cool completely. Repeat with the remaining bowls.
