We have a sweet celebration planned this week, starring this Nicks.US Ice Cream Cake.

Nicks.US is a sugar free, Swedish Style light ice cream, perfect for a healthier indulgence! To keep this ice cream cake sugar free, I used a monk fruit sweetener in my almond flour brownie recipe. I split the brownie batter into 2 heart shaped pans. 

The frosting is whipped cream sweetened with powdered monk fruit sweetener. A little pink food coloring made this perfect for Valentine’s Day!

Once the brownies were baked, I froze them and then added a layer of Birthday Cake Ice Cream to each one. Use whatever flavor you LOVE! Nick’s comes in so many fun and creative options.
