Whatever the season is, Bibingka is seen in Filipinx households all over the world. It is one of many traditional rice cake variations within the Philippines and its taste is comparable to rice pudding; albeit much sweeter and delightful with a cup of coffee or calamansi tea. Filipinos refer to their desserts as “kakanin” which is where bibingka belongs 🍡

🔎 Fun Fact: People from Dingras, Ilocos Norte in the Philippines hold a Guinness World Record for baking a kilometer-long bibingka made from cassava. At least a thousand kilos of cassava comprised the dessert and more than 1,000 people shared the dessert afterward 🪢
