#GenesisPartner. Yes, I met Anthony (my husband) on a dating website! And let me tell you: I had a much better idea of what I wanted in a partner at that time, because I had a much better idea of who I was. That’s the thing they don’t teach you in school or that your parents might neglect to instill in you before you fall in love. Some of you might have been born with it, but I had to learn the hard way.

Believe it or not, I knew that Anthony was the one for me in the middle of one our massive knock-down-drag-out fights. Why? Because he never shut me down or locked me out no matter how angry or upset I grew. I never felt like I had to be this other person in order to protect myself from him. The feeling was so new and exhilarating but also affirming—I’d found a man who was strong enough to love me without trying to shrink me.

My love language, as you know, is food. And one of the most labor intensive dishes I have in my arsenal is kimbap. It’s a fairly standard Korean snack food, usually taken on road trips, which is why we decided to hop into our Genesis #GV60 and find a spot that was as beautiful as the kimbap. We brought Lulu with us because at this point—we are that married couple: can’t go anywhere without our dog! These kimbap were NOT easy to make—I had to practice a lot (which meant that I had about 20 tons of kimbap by the time all was said and done)! A couple answer to questions I know you’re asking:

I achieved the pink color by soaking my tofu in a little beet juice and then crisping the tofu up in the pan.

I achieved the heart shapes by cutting the pink tofu and some Korean omelet lengthwise, down the middle, on a bias. I then flipped one of the halves and pressed the sliced parts together. I then wrapped them in nori before rolling them.

If you guys want, I’ll put a longer tutorial together so you can make these too for someone you love! Let me know in the poll below!
