ONE SKILLET CASHEW CHICKEN by moi 🥡✨❤️‍🔥🥢

Get ready to welcome my one skillet cashew chicken to your weekly dinner rotation. It’s saucy, flavor, and in my humble opinion is 100x better than takeout. It came together in less than 30 minutes, left me with multiple servings, and was an easy clean up in the kitchen. What more could you ask for?! Recipe below!

Ingredients:
4 boneless skinless chicken thighs or 2 chicken breasts
½ cup soy sauce or coconut aminos
¾ cup water
1 tbsp minced garlic
1 tbsp honey
1 tsp grated ginger
2 tsp rice wine vinegar
1 tsp sesame seed oil
1.5 tbsp cornstarch
1 cup small broccoli florets
⅓ cup cashews
1 bell pepper sliced
Green onions for garnishing
Sesame seeds for garnishing
Basmati rice (I like to use the premade packets from TJ’s frozen section)

Directions:
1. Cut the chicken into small cubes.
Heat 2 tbsp of avocado oil in a large skillet over medium low heat. Add the diced chicken and cook until golden on the edges. Remove the chicken from the pan and set aside in a bowl. Scrape any browned bits in the pan but keep the bits in the pan.
2. In a large mixing bowl, whisk together the soy sauce, water, garlic, honey, ginger, rice wine vinegar, sesame seed oil, and cornstarch. Add to the sauce to the same pan that the chicken was cooked in and simmer on low heat until it thickens. Let it buble slightly but then stir occasionally, as you do not want the sauce to burn.
3. Once the sauce has thickened, add in the sliced bell peppers, broccoli, cashews, chicken and mix into the sauce. Cover with a lid and cook on the lowest heat for about 10 minutes until the vegetables have become tender.
4. Serve a few scoops of the cashew chicken mix on top of a bed of rice. Scoop out a few spoonfuls of that delicious sauce from the mix and drizzle on top. Garnish with freshly chopped chives and sesame seeds.
