🍁 Interest in maple syrup itself has grown in recent years, particularly since the coronavirus pandemic. Buyers want to know what they’re consuming, and many are interested in knowing where their food comes from, Montville maple syrup maker Tom Salo says. That bodes well for local producers, who pride themselves on ingredients found in their own backyards.
