CRISPY SMASHED POTATOES + KALAMATA LABNEH (low fodmap friendly)

If you’ve been battling a sensitive tummy, then save this video and follow along for more digestive friendly recipes! I’m new to the low fodmap diet and am navigating my way through the kitchen with a new way of cooking for the next several weeks. While the low fodmap diet can sound restrictive and discouraging, I’m excited to get creative by developing recipes that are nourishing and freaking delicious all at the same time. If you’re struggling with what to eat on this elimination diet, then I hope this recipe + future ones to come, will help you feel hopeful about food again. Ingredients:
1.5 pound bag petit medley baby potatoes
3 tbsp olive oil 
1 cup labneh 
1 tbsp kalamata olives 
1 tbsp kalamata olive juice (pour from jar)
2 tbsp capers 
1 tbsp fresh dill 
1 tbsp feta cheese
Salt, pepper, garlic powder, onion powder 

Directions:
1. Wash the potatoes and bring them to boiling water. Cook on high heat for 25 minutes. Drain the water and pat dry. 
2. Add the soft potatoes to a baking sheet lined with parchment paper. With the bottom of a glass or a mason jar, smash each potato down individually. Drizzle with 2 tablespoons of olive oil and season with salt, pepper, garlic powder, and onion powder. 
3. Bake the potatoes at 400 for 45-55 minutes until the edges are golden.
In a blender or food processor, blend together 1 cup labneh, 1 tbsp kalamata olives, 1 tbsp kalamata olive juice, 1 tbsp olive oil, and 1 tbsp feta cheese. 
4. Once the potatoes are ready to be served, top them off with capers, fresh dill, and the kalamata labneh sauce. Enjoy!
