Ingredients:​⁣
1 pkg (about 1.5 lbs) Wegmans Boneless Skinless Chicken Thighs (excess fat trimmed, sliced in thin strips)​⁣
4 Tbsp Wegmans Fajita Marinade Paste​⁣
Salt to taste​⁣
2 Tbsp Wegmans Pure Olive Oil, divided​⁣
1 pkg (12 oz) Wegmans Pepper & Onion Fajita Blend​⁣
12 Wegmans Fajita Tortillas​⁣
⁣
Optional Toppings: ​⁣
Cotija cheese (Cheese Shop), shredded​⁣
Wegmans Roasted Salsa Verde​⁣
Wegmans Roasted Tomato Salsa​⁣
Wegmans Organic Cilantro, chopped​⁣
Limes, cut in wedges​⁣
⁣
Directions:​⁣
Combine chicken and marinade in large bowl; season with salt. Cover; marinate at least 20 min.​⁣
⁣
Heat 1 Tbsp oil in nonstick pan on HIGH until oil faintly smokes; add peppers and onions. Cook, stirring occasionally, about 5 min until slightly charred. Remove peppers and onions from pan; set aside.​⁣
⁣
Heat remaining oil in pan on HIGH. Add chicken; spread in single layer. Cook, without stirring, about 1.5 min. Stir. Cook, stirring occasionally, about 5.5 min. Return peppers and onions to pan; cook, stirring, 30 sec.​⁣
⁣
Heat separate pan on MED-HIGH. Place 1 tortilla in dry pan; cook briefly on each side until warm and pliable. Transfer to plate; cover. Repeat with remaining tortillas, stacking them to retain heat. Divide fajita mixture evenly among tortillas; garnish with your choice of toppings.​⁣

Chef Tips:​ Also great with our Chipotle Marinade Paste in place of Fajita Marinade Paste. To save on time, replace chicken thighs with Unseasoned Chicken Strips for Stir Fry.
