super easy dairy free no bake mini cheesecakes 🍓 they have a buttery graham cracker crust and a sweet yet tangy filling made with dairy free cream cheese and zesty lemon! 

The filling is so silky smooth it will leave you wanting just one more bite!! 

Here’s what you’ll need:
Vegan graham crackers
Cane sugar
Vegan butter
Dairy free cream cheese- I used Trader Joe’s brand
Full fat coconut cream
Lemon
Vanilla extract
