30 Min Korean Kimchi Soup 😍

This comforting dish has the perfect balance of tangy, spicy, and savory. It’s our go-to recipe we make when we want something warm and satisfying on a cold day.
 
📝 Ingredients — 1 serving

* ½ small yellow onion, sliced
* 3 garlic cloves, minced
* 4 oz pork belly, sliced
* 2 shiitake mushrooms, sliced
* 1 cup kimchi, chopped
* 4 oz block firm tofu, sliced
* 2 green onion,  minced

Jjigae Soup Base

* 2 ½ cups anchovy broth (or choice of broth/stock)
* ¼ cup kimchi brine
* 2 teaspoon brown sugar
* 1 tablespoon Gochugaru 
* 1 teaspoon gochujang 
* 1 tablespoon soup soy sauce
* salt to taste
* 1 teaspoon sesame oil

Instructions
1.  In a small pot over medium-high heat, sauté  the yellow onion and garlic in a tablespoon of oil until fragrant—about 1 minute. 

2. Then add the pork, kimchi, and mushrooms and cook until the pork is cooked through—about 5 minutes. 
3. Next, add the anchovy broth, kimchi brine, sugar, gochugaru, gochujang, and soy sauce. Bring to a boil and then cover and lower the heat to a gentle simmer for 10-12 minutes. 
4. Then add the sesame oil and tofu and simmer for 5-7 minutes. Season with salt. Garnish with the green onion and enjoy immediately with steamed rice.
