A bowl of Broccoli Cheddar soup, the couch, and Netflix... sounds like the perfect autumn night! 

Ingredients:

1/2 stick of salted butter
4 cloves minced garlic
1 chopped small yellow onion
1 & 1/2 cups shredded carrot
4 tbsp all purpose flour
2 cups broccoli 
1 tsp salt 
1 tsp black pepper 
1 tsp paprika 
1 tsp onion powder 
Dash of cayenne pepper 
4 cups low sodium chicken (or vegetable) broth
2 cups heavy cream
2 cups shredded cheddar cheese (I used sharp)
