SPICY GARLIC EGGPLANT

- 2 tbs extra-virgin olive oil
- 1 lb eggplant, unpeeled, cut into 2in chunks
- 6 dried chiles, softened in boiling water, and chopped up
- 3 garlic cloves, thinly sliced
- 1 tbs finely minced peeled fresh ginger
- 1/4 cup chopped green onions
- 2 tbs of soy sauce
- 1 tsp of sugar
- 1 tbsp of vinegar, such as distilled white, red wine, or apple cider 
- 3/4 cup of water
- 1 tsp of cornstarch 
- 1 tbsp of vegetable broth
- salt and sluttyveganatl’s Slut Dust (or your favorite all-purpose seasoning blend) 
- Mixed greens, for serving
