Chef Indigo Mathewson is a private chef from #Honolulu who loves to #forage for her ingredients. Her passion for food and nutrition began a decade ago from health issues related to years of a poor diet. Since then, her commitment to eating better and diversifying her palate allowed Indy to overcome her diet-related ailments. She has a Bachelor’s in Science from bastyruniversity with a focus in Nutrition and Culinary Arts. While pursuing her degree she worked in restaurants, catering companies, and #farmersmarkets on Oʻahu and in Washington State. Indy uses her experience in the food industry and knowledge of holistic nutrition to create nourishing meals for her clients. Today, indyycook is showing us how to forage for Hōʻiʻo (Fiddlehead Fern) and make a yummy salad. Hō'i'o Steak Salad⁣
3 cups chopped and blanched hō'i'o⁣
1 cup cherry tomatoes, halved⁣
1/2 small/medium red onion, sliced thin⁣
1-2 green onion, sliced⁣
1 tbsp minced ginger⁣
2 tsp toasted sesame seeds⁣
1 tbsp toasted sesame seed oil⁣
1-2 tsp fish sauce⁣
1 tbsp soy sauce⁣
1 lemon, juiced⁣
1 steak cut of choice, prepared in the way you like.⁣
⁣
Blanch fresh hō'i'o and chill in an ice bath. Drain, and mix in a large bowl with remaining ingredients.⁣
Remove steak from the fridge and bring to almost room temperature. Season with salt, and sear in a hot pan or on the grill. Slice thin, and place on a plate with the hō'i'o salad on top. Enjoy!
