## Caption

Holding on to the last days of summer with this delicious dessert recipe! 🥧 Inspired by the crumble recipe in Run Fast Eat Slow (cookbook by shalaneflanagan and elysekopecky), this crumble is the perfect way to cook up any extra fruit and keep summer around for a little longer! Try it with different combos of fruit (I’ve done it with apples too!) depending on what’s in season.

2 fun things:
1. The crumble on top is SO similar to my granola recipe! So if you’ve ever tried that (if you haven’t you should) you know what you’re getting into there.
2. Eating the final product (with a scoop of ice cream) transported me to Grandma Quigley’s kitchen around the holidays when she always has a fresh blackberry cobbler at the ready. TBH, Grandma’s is better, but this is at least reminiscent so I’ll take it!

RECIPE
-Mix and put in a pie pan:
6 cups of fruit (I used fresh blackberries and peaches)
2 tbsp chia seeds
Juice of 1 lemon

-Mix and put on top of the fruit:
1c oats
1/2c almond flour
1/2c chopped nuts (I used pecans)
1/4 tsp salt
1/4 tsp ground ginger
1 tsp cinnamon
1/4c maple syrup
1/4c coconut oil

-Bake at 400 for about 30 min until top is golden brown and the fruit juices are bubbles at the edges of the pan.
