#Ad My first ever cooking video! Maybe a cooking show will be a post-running career option! 😉 In this video I made a kale salad with tuna, beans, quinoa, avocado, broccoli, and lemon. It turned out delicious and is perfect as leftovers because the kale softens in the fridge overnight and becomes even better the next day! Eat it as is or wrap it up in a tortilla. I used chickenoftheseaofficial wild-caught tuna Infusions™️ in this recipe. The packs come infused with olive oil, herbs and spices, so the dressing is already started for ya! I used the lemon and thyme tuna and added more lemon and olive oil to make it into a whole salad. Each pack has at least 20g of protein and doesn’t even smell like fish! 
Here’s what you’ll need:
1 head of Tuscan kale, washed and dried
1 can beans, (cannellini, garbanzo, etc) rinsed
1/2 c cooked and cooled quinoa (cook according to package directions)
1/2 head of broccoli, chopped into bite-sized pieces and steamed until bright green, not brown (2-4 min)
1/4 red onion, chopped finely
1 avocado, chopped into small pieces
2 containers of Chicken of the Sea Tuna Infusions (I’m using the lemon and thyme flavor)
2 tbsp extra virgin olive oil
1 lemon, juiced
salt to taste 
Here’s what you do:
1.Destem the kale leaves and chop into thin slivers (see video for a kale destemming and chopping trick) 
2.In a large bowl, combine chopped kale, beans, quinoa, avocado, onion, broccoli, and Chicken of the Sea tuna Infusions. 
3.Add olive oil and lemon juice then mix everything together well so that the kale leaves are covered in the lemon and olive oil. 
4.Eat right away or store in the fridge. This salad gets better with time! If it sits in the fridge overnight the kale soaks up the oil/lemon and softens to make it easier to eat.
