Every time I head out on a stunning road trip throughout California, I love seeing the many green, rolling hills with happy cows galore! This colorful cake is the perfect summer snack because it’s filled with ice cream that is sandwiched between two thin brownie layers and topped with freshly whipped cream, cherries, pistachios and almonds (how to Reel to come soon)!
