chewy vegan lemon sugar cookies 🍋 definitely a sucker for anything lemon flavored, especially this time of year…anyone else the same?

These lemon cookies have a soft yet chewy texture with the best fresh lemon flavor. (Plus the recipe includes a tangy yet sweet, optional lemon drizzle). Here’s what you’ll need to make them:

Vegan butter
Sugar
Vanilla & lemon extract 
Flaxseed
Lemon 🍋 
Flour
Baking soda
Salt
Powdered sugar (for the icing)
