I don’t think it’s a big secret that sheet cakes are one of my favorite things to bake. But sometimes I’m too lazy to scoop and level the flour, measure the sugars and dig the fresh box of baking soda out of the pantry. So on lazy girl baking days I like to make this pumpkin snack cake with vanilla bean cream cheese frosting. Made with simplemills pumpkin muffin and bread mix, this cake is impeccably spiced, perfectly pumpkin-y and I betcha can’t even tell it’s gluten free.
