"Ceviche of Yellowtail. Plantain & toasted Furikake crumbs. Fish is first brined in a solution of water, salt, sugar, orange rind, and furikake. Then sliced and seasoned for 15 minutes in orange juice, olive oil. Finished with flake sea salt."
