SCALLOP SEARING TIPS:
🔥 Dry your scallops!! Air dry in your fridge overnight or all day if you can. Also lay fry with a paper towel before you sear them!
🔥 Salt them only immediately before they go into the skillet. Any sooner will draw the moisture to the surface preventing the sear!
🔥 Do not overcrowd your pan! Even as loaded as I have it in this video is pushing it.
🔥 Do not overcook them. No more than 90 seconds as wide generally. 60 seconds if they aren’t too big.
