This is a brahmancountrybeef tomahawk! A lean but flavor rich breed IMO. I helped combat some of that leanness with a board dressing, adding fat and flavor 🔥 It can be as simple as olive oil, salt and herbs or more complex like this! To make this one:

Lemon juice 
Soy sauce
My umami rub
Capers
Garlic 
Parsley
Salt
Pepper
