Traditional Shio Ramen 🍜

This is a basic but flavorful bowl of ramen that starts with lots of prep! 
.
The traditional chicken stock is made with necks and carcasses that have been cleaned and then are simmered in a homemade dashi with half an apple, ginger, 5 cloves garlic and half an onion. 
.
The shio tare is made from shiitake, dried sardines, salt and seaweed! Grind to a fine powder, simmer in water, strain and then add salt.
.
The seasoned eggs are half-boiled eggs “seasoned” in a soy sauce, mirin, salt and a few other things. 
.
The chicken chashu is chicken thighs that are rolled, seared and then simmered in chashu sauce which I also made.
.
Once the prep is done, assemble and enjoy this labor of love! Absolutely bananas with the flavor! Umami savory goodness for days and days 💯 I can do so much more than BBQ 💪🏾
