Gator 🐊 Gumbo 🔥

I’ll start by saying this is by far my favorite way to eat gator! Crazy tender and very chicken like 🤌🏾 If you a chance to try gator but are
hesitant, throw it in Gumbo 💯
.
Ingredients:
1.5 cups flour 
1 cup tallow/lard/oil
1/2 gallon chicken stock
1/2 gallon beef stock
3 stalks celery diced 
3 bell peppers diced 
Okra 
4 cloves garlic thin sliced 
2 bay leaves
Louisiana hot sauce
Cajun seasoning

White rice 

Gumbo recipe ⬇️
1. Have all veggies/proteins diced and ready
2. Slowly stir in 1.5 cups flour to 1 cup tallow, lard or oil. Stir constantly for 30-60 mins until roux is appropriate color. Don’t rush it. Cook down your okra while this is happening
3. Add in your trinity and sauté a few mins. Add in your andouille sausage and your gator meat. Sauté a few mins. 
4. Add your stock (I use a mix of beef and chicken) starting with a a few ladles at a time ti make sure it’s smoothly incorporated effort adding the rest. Add in tomatoes, Worcestershire, hot sauce, Cajun seasoning, bay leaves and salt and pepper. Let simmer for 1 hour. 
5. Add in okra and simmer 10 mins. Add shrimp and cook through. Serve immediately w/ white rice and enjoy 🔥
NOTE: this recipe is all to taste. Want more heat, use more hot sauce or add cayenne pepper. Adjust and make it your own!
