To make these: make a cut around the drumstick just below the knuckle. Remove all the meat and cartilage above your cut. Remove any tendons you can. Push the meat down being careful of the sharp bone. Cut the sharp bone off at the base. Season and smoke the drumsticks. At the last 20 minutes apply your sauce. Smoke 10 mins. Apply your glaze. Smoke 10 more and enjoy!
