Served with with some gustusvitae blue cheese mashed potatoes and some caribeque calypso broccoli. Steak rubbed with gustusvitae this thing of ours .

Bearnaise is simple AF. Shallots, vinegar, tarragon, butter and 3 egg yolks is all you need!!!! Reduce 2 oz vinegar with shallots and tarragon down to 2 tablespoons. Add that liquid to a double boiler but don’t let the water touch the bowl. Whisk in eggs... do not scramble. Remove from heat and go@back and forth if need be. Whisk in one stick of cubed butter 2 cubes at a time until creamy AF 🔥 season with a punch of cayenne, salt and a little more fresh chopped tarragon!
