Used a shoyu tare as I’m pretty sure I read ramenover say its best with tonkotsu and damn do I agree 💯tonkotsu started my love for ramen... I’m no where near a master but fuxk this bowl was good 🤤The broth consisted of pork trotters and belcampomeatco fat back, ginger and scallions. Added 2.5 tablespoons of tare to the bowl along with a generous helping of fresh made garlic aroma oil. The pork belly was sous vide in a homemade chashu for 3 hours. The texture was perfect 💯 .
