“No meat today mija!” Gotta love the texts I receive from my mama! During the Lenten season we don’t eat meat on Fridays, but fish is fair game. I still don’t understand why, but I don’t question my mama 🤣 So on the menu today is Mexican beer-battered cod, fried to perfection topped with chipotle cream sauce and garnished with red cabbage, thinly sliced jalapeños and radishes, pico de gallo, and avocado.
