This time change has me all confused, but it was a nice excuse to have brunch and make French toast. As I was making it - I remembered how I used to beg my grandma to make French toast when I was little, and one morning she surprised me and I was in heaven. My mom was never into French toast so she never made it. French toast also reminds me of my BFF — she used to spend the night and make us French toast when we were teenagers. I love how one bite of a dish can bring back so many beautiful memories. This Baked Mexican French Toast has the flavors similar to one of my favorite desserts – capirotada (Mexican bread pudding), but instead of using bolillos, I made this dish with challah bread. In the Yucatan, there is a similar dish made with French bread called caballeros pobres, which translates to “poor man or poor knight dish”. The traditional dish is usually dipped in an egg-white meringue and then the slices are fried. In my version, I decided to bake the French toast and omit the meringue shebang for a simpler and healthier version. The thick and fluffy challah slices soak up the egg, milk, and buttermilk mixture and bakes to perfection. Once baked the slices are drizzled with a homemade magical piloncillo and cinnamon infused syrup, topped with plump golden raisins, pecans, and a bit of orange zest giving this French toast a Mexican twist.
