While in Oaxaca I had the most amazing ensalada de nopales asados (grilled cactus 🌵 paddle salad) and I told myself I was going to try to recreate it for the blog. Hard to believe it's almost a year later and I'm finally going to make it. Wish me luck!!! My mouth is watering just remembering the unique flavors and ingredients of the one I tasted in Oaxaca.
