The most rewarding part of my job is witnessing the reaction, a moment I don't always get to see. This one is in the shape of Charlotte Latin's middle school, and is honoring its retiring principal. The age old question with almost every cake is "how long does it take to make a cake like that?" I choose not to add up the hours (can barely keep track) so my answer is usually, "a long time." For this one, though, I can break it down to this estimate: -5 hours planning and designing: including onsite visitation, researching (could not do it without Google Earth!) and calculating sizes, sketching, measuring, emailing and corresponding, also including the time it takes to estimate the time it takes to make and the cost it will require to give fair quote -5 hours to bake (150 servings of vanilla cake) and make icings, color fondant, prep all supplies needed to build.
-16 hours to "build": fill and ice cake layers, assemble, apply fondant, detailing and landscape
- not included: the time it takes to get ingredients and all the cleaning and cleaning and all the cleaning
-1 hour to deliver, give myself a pat on the back, (and tell myself to never take orders like this again) -probably 1 minute to say yes to the next crazy shaped cake order
