Thank you, thank you, thank you to everyone who wished me a happy birthday! I turned 45 years old yesterday and I have the white hairs to prove it! 🤣

As those of you who get my weekly emails know—a few months ago, we celebrated my father’s 80th birthday. My mother ordered a custom Korean style bakery cake for his party and sadly, I could not have any! I was SO BUMMED! But I also wasn’t surprised. Korean style bakery cakes start with a perfect sponge cake and… well… vegan sponge cake is practically an oxymoron.

I’ve been attempting to perfect the vegan sponge cake since I went vegan—that’s right, since 2016. And while there are a ton of great vegan vanilla cakes out there (including the one in my own cookbook!), they don’t possess the bounce and fluff that I associate with a Korean bakery cake.

Needless to say, I resumed my quest to make the PERFECT vegan sponge, and to do so in time for my own birthday. I would NOT be denied my Korean style bakery cake!! Well, it turns out the solution lies buried in a conversation I had with my friend, Sheil (plantbasedartist) many years ago. He once made a delicious savory cake for me that reminded me so much of a classic French sponge. I asked him how he achieved the delightfully airy crumb and he explained,

“Oh! It’s steamed, not baked!”

I’ve since spent HOURS AND HOURS watching many many videos of steamed eggless cakes, all of which were shared by content creators from India, but NONE of which were vegan (they all contained dairy). I was so nervous to try this methodology out on my own tweaked vegan version but it came out PERFECTLY.

Now… I have to figure out how to frost this baby without it collapsing!

I’m so grateful to Sheil for sharing that little tidbit with me all those years ago. I’m also grateful to all the many cooks and chefs from India who shared all the different ways to steam a cake.
