## Caption

Fast, healthy and flavorful, our Yucatán-Inspired Seafood Tacos are easy to prepare on the grill and especially delicious in warm weather. You can use this versatile marinade with either a white fish or shrimp. Both will cook quickly on the grill, and you’ll know the fish is ready when it starts to flake easily with a fork.

Serves: 4 to 8

1 recipe Yucatán-Inspired Marinade
1 lb 21-24 shrimp, shelled, deveined OR 1½ lbs white flakey fish (such as halibut, red snapper, tilapia)
Neutral oil, such as grapeseed, avocado, vegetable
Kosher salt 
8 tortillas (5 to 6”), corn or flour
Chipotle mayo
½ cup loosely packed cilantro leaves
Pickled red onion slices
Lime wedges

1. Combine the fish or shrimp with marinade in the bowl. Cover and refrigerate for up to 30 minutes (no longer).
2. Remove from marinade and pat dry with paper towels. Oil each side and season with salt. 
3. Grill fish on both sides until just cooked through, about 4 minutes per side. Shrimp will take about 2 minutes per side. Let the fish rest for 5 minutes before flaking apart with a fork. 
4. While the fish is resting, grill the tortillas on each side until lightly marked, about 10 seconds. Wrap tightly in foil and let steam for about 5 minutes. 
5. Spread a tablespoon of chipotle mayo on a tortilla, top with several pieces of fish or shrimp, pickled red onion, cilantro and lime juice to taste.
