"I opened the business this year because I wanted to bring a whole animal butcher shop that focuses on local farms back home to Pittsburgh. I started focusing on the importance of sourcing local and learned the craft of whole animal butchery while living in Madison Wisconsin and working at Underground Butcher. My goal is to help create a better connection between our customers and farmers.⁠

We make breakfast and lunch sandwiches, soups and sides every day that we're open. We serve grab and go as well as made to order burgers, sandwiches and the menu is always changing so check our instagram fatbutchershop."⁠

What gets you excited to go to work every day?⁠
"I love working with high quality local products. When you know where your food comes from, it really makes a difference. Local tastes better."⁠

What struggles are you going through right now?⁠
"It is difficult to educate everyone. We created a page on our website called "The Cuts" so that people can learn about all of the other amazing steaks and roasts that exist on these animals. Everyone knows about a ribeye or tenderloin, but there are 100 other cuts that we had to try before being able to answer the question "what is your favorite cut"... Mine is the Tri-Tip by the way. Other staff love the Gem Steak, Spider Steak, Mock Hanger or Flat Iron. These are steak recommendations you'll find at Fat Butcher. But, it is a struggle to get that info out there."⁠
