#ChefLamon  In 2018 I was invited to the pre-opening of the nomadvegas, so I got to spend a fun weekend in Las Vegas. I also went to the Nomad Restaurant’s friends and family dinner which was definitely one of the best nights of my life. The room was classic yet modern, luxurious yet not pretentious. As I sat and took a look around, I spotted wguidara walking towards my table! I am not the kind of person that goes and “bothers” his idols when he sees them, but one of the best in this industry was just feet away from me and I wasn’t going to miss that opportunity 🔝

I went to say hi and he was nothing but extremely pleasant and the way he was talking to me was as if I was one of his oldest friends, pure and honest Hospitality. I went back to my table, grabbed the menu and minutes later he came and sat with me! He looked at me and told me (I still remember): “Pablo (yes, he remembered my name!), it was really nice to meet you”, and  we spoke briefly one more time. He told me then, before he left, “I will order some food for you”. What came after was one of the most perfectly executed and delicious meals (classic danielhumm), but one dish standed out: The fava bean Hummus, Simple, delicious, perfect 💯

When I came back to Miami, on my first day back at 27Restaurant I had to make a “special”, and we didn’t have many ingredients. I found some beets leftover from an event, so I decided to make a Beet Hummus to honor my trip and the result was one of my favorite dishes ever! This is my Beet Hummus, Cold pickled radishes, cucumber sticks, with  chefryanpierce’s Roti bread 👌
