How to poach an egg: 

Bring 8 cups water to a simmer with 1/4 cup white vinegar. 

Put your egg on a fine mesh strainer to get rid of some of the extra scraggly white bits, then poach for 2 1/2 minutes. 

Season with salt and pepper and serve.
