Lemon Zucchini Bread
.

2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon of salt
2 large eggs
1/2 cup vegetable oil
1 1/3 cups white sugar
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1/2 cup buttermilk
1 cup shredded zucchini drained thoroughly.

Icing:
1 1/2 cups powdered sugar
1 tablespoons milk
2 tablespoons lemon juice

Directions:

In a medium bowl, add the flour, salt, and baking powder, and mix on the lowest setting to sift.
In a larger bowl, add eggs, and beat until fluffy. Add the oil and sugar and blend on a higher speed until fluffy. 
Add the lemon juice, buttermilk, and zest; combine.
Lower the mixer speed and add the drained zucchini.
Pour the batter into a parchment-lined loaf pan.
Bake for 55-60 minutes at 350 degrees F.
Allow loaf to cool for 30 minutes.
Add powdered sugar, lemon juice, and milk to a bowl, and use the immersion blender attachment to mix until smooth and creamy. Pour icing over the loaf, and slice. Enjoy!
