This dressing comes together effortlessly and stores well in the fridge for up to two weeks! Made with Pompeian Extra Virgin Olive Oil (EVOO) (a healthy addition to any meal), this dressing is bursting with sweet, tangy flavor. We love using Pompeian Olive Oil because they have a variety for all cooking! From Robust, to Smooth—there is something for EVERY summer meal!

You will also need an airtight storage container for the dressing.

1 cup of fresh red raspberries
¼ cup Pompeian Robust Olive Oil
¼ cup red wine vinegar
Honey – 3 tbsps.
Sea Salt -1/8 tsp
¼ cup Lemon Juice

Whisk together the lemon juice, honey, vinegar, salt, and olive oil. Pour contents and red raspberries into a blender and blend until smooth, about 30 seconds.

Pour dressing into an airtight glass container until ready to use. We served our dressing on a simple spinach, red onion, feta, and walnut salad. It paired so perfectly together!
