AD: If you love the savory flavors of fresh garlic, lemon, spinach, and artichokes, you'll love this easy, but upscale meal! This pasta dish took me just 15 minutes to make from start to finish and has the same quality flavors as a pasta dish you'd find in a high end restaurant. But, unlike most traditional pasta dishes, the rotini I used are extra special. In fact, they are made out of chickpea flour!

We found ours at ShawsSupermarket in the pasta aisle for under $3 per box!! I love the taste, and texture of this Barilla pasta which is just made from one ingredient. It cooks in just 7-9 minutes, and is much better than pretty much ANY pasta alternative I have tried. So far, I've made 2 recipes with the Barilla Chickpea Rotini and they were both a hit!

If you want to recreate this Spinach Artichoke pasta you will need a few simple ingredients which include Barilla Chickpea Rotini, olive oil, fresh lemon, cracked black pepper, canned artichokes, fresh garlic, spinach, and fresh parsley. You can also add a touch of Parmesan cheese, but it is not needed.
