This easy Sheet Pan Pork Souvlaki dinner it’s a Mediterranean fiesta on your plate. With juicy pork, roasted potatoes, peppers, onions, tomatoes, feta, and olives all partying together, this dish is packed with flavors. Enjoy!

Sheet pan pork souvlaki! 
Servings 4

Ingredients

2 lb pork country style ribs boneless cubed
1 lb baby potatoes halved
1 red bell pepper sliced
1 medium red onion sliced
1 package of grape tomatoes or other variety 
1 cup Feta cheese cubed
1 cup kalamata olives
1 tbsp fresh dill chopped to serve

For the marinade

1/4 cup olive oil
3 tbsp lemon juice (1 lemon)
1 tbsp Dijon mustard
3-4 garlic cloves grated
1 tbsp salt
1/2 tsp black pepper
1 tbsp dry oregano
1 tsp paprika

Instructions

Preheat oven to 425F degrees. 
In a bowl whisk all ingredients for the marinade. Pour half of the marinade into the cubed pork. Combine well massaging the meat and refrigerate for at least 30 minutes. 
Spread the rest of the marinade over the baby potatoes and peppers and onions. Toss to combine. 
Arrange pork and vegetable on a baking sheet pan. Bake for 20 minutes. Toss to combine with the vegetables. 
Remove from the oven and add tomatoes, Feta cheese and kalamata olives. Bake for another 10 minutes until pork is cooked but still juicy and potatoes are tender. 
Remove from the oven and sprinkle fresh herbs like dill or parsley. 
Serve with pitta bread tzatziki sauce.
